10 Minute Sweet and Spicy Sesame “Chicken” and Lentil Soup Recipe

On my healing journey it’s usually really hard for me to cook for myself. My Mom and I always come up with the recipes and she executes them beautifully while I cheerlead on the side and help when I can. Yesterday I could see that she was a little stressed and tired. I told her I will make my own soup since I felt like I could. Before I wouldn’t even be able to attempt it because I struggle to stand without passing out. Now we have a pretty lightweight wheelchair that I can Fred Flintstone my way around the kitchen seated. And then a recipe popped into my head so I made up everything on the spot. It took me about 10 minutes and it was really simple! I sat my beautiful Mom at the table, brought over the candle I had burning, and served her this delicious meal that she absolutely loved. It’s yummy! Usually we make soup from scratch and I rarely make any process food because I try to stay as close to Whole Foods or minimally processed food. But when you need something quick, at least these ingredients are organic and as healthy and minimally process as possible.

Recipe


-Cook up Daring Food’s original chicken with a half tablespoon on organic Extra Virgin Olive Oil on med/high heat until it’s brown and crispy.

-Heat up a can of Amy’s Kitchen Organic quinoa, kale, and red lentil soup. (We added some cooked spinach, thyme, mustard seed powder and more salt after I sat down to taste it more).

-Make the sticky sauce with 2/3 The Date Lady Sweet Chili Sauce and 1/3 Coconut Aminos.

-Once the chicken is done and has cooled down slightly, throw it in the sauce and coat it.

~Put it on the plate and pour the extra sauce over the top.

- Add sesame seeds on top and some sea salt if you’d like.

- Pour the soup into a bowl and enjoy!
